PHYSICHOCHEMICAL CHARACTERIZATION AND EVALUATION OF BACTERIOCIN ACTIVITY ORIGINATED FROM LACTIC ACID BACTERIA ISOLATE 13 B FROM COLON'S BALI CATTLE

Lactic Acid Bacteria (LAB) are a group of Gram-positive, bacteria wich bacilli, or coccu shaped, and negative catalase. LAB produce antimicrobial compound like bacteriocin. That was know having bacteriostatic or bactericidal activity against phatogenic bacteria. According to itís abiliyy, it can be used as antibiotic or food biopreservative. The purpose of this study is to identify the characterisation of its physico chemical characteristics. The study was initiated by Gram staining and catalse test, followed isolating and purifying of bacteriocins by tested chemically on Ninhidrin, Molisch, and Lowry tests. Furthermore, bakteriocins were tested to identify its potency as a antibacterial compound against Bacillus cereus, Staphylococcus aureus, and Escherichia coli. The result of study identified that bacteriocins isolated from isolates of 13B lactic acid categorized as a protein with molecular weight about 10 kDa. There were also known having antimicrobial activity against Bacillus cereus, Staphylococcus aureus, and Escherichia coli.
