To get a good quality salak fruit can be done with pruning and hormone administration. The purpose of this research is to know the effect of pruning and giving hormone to the quality of Salak Sugar Sand Salak (Salacca zalacca var.Sugar Sand) out of season. This research was conducted in Sibetan Village, Karangasem Regency. The study was carried out from September to October 2014. The design used in this study was Randomized Block Design (RAK) with 5 treatments ie ATBD treatment (tillers were not discarded by ex-flower removed), ADBT (Non-toxic Extract), Hormone IBA Indole Butynic Acid), NAA (Naphthalene Acetic Acid), and Farmer (Control) method, if there is a significant difference followed by BNT test of 5% level. The variables observed in this study include: weight per fruit (g), fruit meat weight (g), diameter and thickness of fruit flesh, seed weight and weight of seed shell, total dissolved solids, shrinkage weight and water content of fruit. The results showed that the treatment of pruning and giving hormone had significant effect on the production and quality of the sugar bark fruit, seen in the weight variables per fruit, fruit weight, seed weight, skin weight, fruit flesh diameter, flesh density, total sugar, And moisture content. The weight per fruit, the weight of seed peel and the thickness of the highest bark are found in the growth hormone. The diameter of the flesh, the thickness of the fruit and the weight of the salak seeds was higher in the pruning and growth treatment of IBA but not significantly different from the NAA hormone. Total sugar content in the control treatment was higher than total sugar content in pruning and growth hormone treatment. Plants that are given growth hormone have a lower weight loss than control treatment. The water content of the fruit with the pruning treatment is lower than the control treatment and the growth hormone grew.
