Udayana University Hosts the 2nd International Seminar on Food Science and Technology 2025

The Faculty of Agricultural Technology, Udayana University, proudly hosted The 2nd International Seminar on Food Science and Technology (ISoFST) 2025, held from November 5–7, 2025, in Denpasar, Bali. The event, initiated by the Department of Food Science and Technology, Faculty of Agricultural and Engineering Technology, IPB University, was organized in collaboration with the Faculty of Agricultural Technology of Udayana University, Dhyana Pura University, and Universiti Putra Malaysia, with support from the Indonesian Association of Food Technologists (PATPI) Bogor and Bali Chapters.

Carrying the theme “Fostering Sustainable Food Systems and Alternative Food Sources,” the seminar served as a scientific forum bringing together researchers, academics, industry players, and policymakers from various countries to discuss challenges and innovations in sustainable food systems. More than 11 countries participated in the event, which featured plenary sessions, parallel presentations, student competitions, and strategic workshops on scientific publication and LAM-PTIP accreditation.

Rector of Udayana University, Prof. Ir. I Ketut Sudarsana, S.T., Ph.D., emphasized the importance of cross-disciplinary synergy in building a resilient food system. “We must ensure that our food systems become more resilient, inclusive, resource-efficient, innovative, and environmentally sustainable,” he stated. He further underscored that ISoFST is not merely an academic seminar but a platform for scientific diplomacy and global collaboration contributing to the achievement of Sustainable Development Goals (SDGs) 2, 12, and 13.

Meanwhile, Rector of IPB University, Prof. Dr. Arif Satria, in his opening speech, highlighted Indonesia’s pivotal position in the national food transformation agenda. He presented various IPB innovations in agriculture and biotechnology aimed at addressing climate change and food security challenges. “Sustainable transformation is not only about increasing production but also about redesigning how food is produced, processed, and consumed to make it more resilient and equitable,” he remarked.

Prof. Arif also noted that IPB is developing an innovation ecosystem that connects academia, industry, and government through the Triple Helix model. “We believe that diversifying food sources and transforming consumption culture are key to building a sustainable and sovereign food system,” he added.

Chair of the ISoFST 2025 Committee, Prof. Dr. Nugraha Edhy Suyatma, expressed his gratitude to all partners and sponsors for their support in realizing this international-scale event. He emphasized the relevance of the seminar’s theme to today’s global challenges. “This theme reflects our shared commitment to transforming the way we produce, process, and consume food amid climate change and population growth,” he said.

Over the three-day event, ISoFST 2025 featured nine keynote speakers from leading institutions, including Prof. Donghwa Chung from Seoul National University, Prof. Gert W. Meijer from Nestlé HQ Switzerland, and Susana, S.TP., MSc, PD.Eng from Nutrifood Indonesia. The program also included the National Student Concept-Note Paper Competition (NS-CoPaC), involving students from IPB University, Udayana University, and Dhyana Pura University.

In addition to academic sessions, participants joined a Cultural Excursion and Social Day to Garuda Wisnu Kencana, Pandawa Beach, and Uluwatu on the final day, fostering intercultural interaction and networking among participants.

The seminar concluded with the announcement of winners for Best Oral Presenter, Best Poster Presenter, and Best NS-CoPaC Team categories. Through this event, Udayana University reaffirmed its commitment to strengthening international networks, expanding research collaborations, and contributing to global efforts toward building a healthy, inclusive, and sustainable food system.
